Perfect Summer Salad - Beet & Blueberry Salad

Thanks to one of our GYN Retreat Alumni Beth for this FABULOUS Recipe, and for being a part of our first Anti-Inflammatory Gardening Day at Wind River last month.  We just had to share this receipe with others!!!

​For the beets, tightly wrap:
3 large beets (2 lbs)
For the vinaigrette, whisk:
1/3 cup fresh lemon juice
2 Tbsp. each honey & extra-virgin olive oil
1 Tbsp. grated fresh ginger
2 tsp. Dijon mustard
Salt & Pepper to taste
For the salad, combine:
4 cups fresh blueberries
1 cup chopped walnuts, toasted
1/2 cup chopped fresh mint
crumbled goat cheese (optional)
Directions: Preheat oven to 400
For the beets, tightly wrap in heavy-duty foil, place on a baking sheet, and roast until fork tender. about 3 hours. When cool enough to handle, remove and discard skin from beets, dice.
For the vinaigrette, whisk together lemon juice, honey, oil, ginger, and Dijon, season with salt and pepper.
For the salad, combine beets with blueberries, walnuts and mint. Toss salad with vinaigrette and garnish with goat cheese.
*for time savings, roasted beets are available in the produce section at Trader Joe’s and many other grocery stores.

Come on out to the Wind River Booty Booth!

As many of you know the 24 Foundation (new name) hosts a cycling event called "24 Hours of Booty" to raise monies to support cancer survivorship including integrative medicine support at Levine Cancer Institute in Charlotte and our survivor wellness activities at Wind River!

This year 24 HOB will be held on July 28-29th at it's original location at Queens University (Charlotte, NC).  1400 cyclists will ride a 3 mile loop affectionately called "The Booty Loop" over an over for 24 hours.   Some do it as teams, others as individuals.

Wind River hosts a rockin' SMOOTHIE BAR where survivors and friends of Wind River serve rides delicious and motivating smoothies of their own design.  Last year we rocked over 1,000 smoothies!!!   

Come out this weekend and join us at the MISSION TENT in the Expo area.  Family friendly.  We'll be there Friday from 4pm - 9pm and on Saturday until early afternoon!

AND survivors and their families are all welcome to join us at the Survivor's breakfast Saturday morning at 8am!!!

Charlotte-area alums! Did you know that Centered Wellness/Yoga for Life offers FREE weekly Yoga for Cancer classes for survivors? Join them Mondays @ 5:45 p.m. and Fridays @ 11:00 a.m.

Join us Tuesday, May 9th for a special event at The Pink House in Charlotte. Wind River's very own Cheryl LeCroy will be teaching us Easy Gardening for an Anti-Inflammatory Diet!

Learn the basics of an anti-inflammatory diet and why it's super important to eat a rainbow of fruits and vegetables. Perfect timing to plant a spring garden, Cheryl LeCroy of Wind River Wellness Retreats will teach you to grow your ingredients for the anti-inflammatory diet and boost your immunity with herbs and spices from right outside your back door.  Discover local, simple and creative ways to integrate eating well as a way of life!

WHERE: Carolina Breast Friends, Pink House 1607 East Morehead Street Charlotte, NC 

WHEN: Tuesday, May 9th - 6 - 6:30 (Meet and Greet), 6:30 - 7:30 (ish) Gardening workshop 

WHO: ALL Wind River alumni welcome, not breast cancer specific. As always, our programs are FREE to survivors!
