Terra’s Table: The Healing Power of Mushroom Powder

Did you know that Shiitake mushrooms contain high levels of potassium, magnesium, copper, B vitamins and vitamin D? They have all the essential amino acids,  rivaling meat as a complete protein (amazing). You can add this wonderful (and delicious) nutrition to many recipes from breads and salads,. to meats and eggs, to sauces and smoothies. 

Laura Dahl of Dahl’s Farms and I have just launched Terra’s Table – a website that sells carefully prepared powdered mushrooms that can be used in all of your cooking. Terra’s Table Mushroom Powder is available in two blends; Shiitake and a mixed medley called the Power Blend (Shiitake, Oyster, Lion's Mane & Maitake) Both blends are made from the finest, natural mushrooms, expertly dried, and powdered to create a nutrient dense, all natural real food supplement. Each package of mushroom powder contains approximately ½ teaspoon per day for one month.  What a GREAT way to eat your mushrooms EVERY day!

RECIPE: Garden Fresh Kale Pesto
 
Ingredients 
  3 C chopped kale
  1/3 C walnuts
  2 cloves garlic
  1/2 C grated parmesan cheese
  1/4 – 1/2 C extra-virgin olive oil

  1 tsp lemon juice (optional)
  1 tsp shiitake mushroom powder
  1/4 tsp Himalayan pink salt (or to taste)
  Pepper to taste
Directions:
   Place the kale, mushroom powder, salt and pepper into a food processor and pulse until finely chopped.  Add walnuts, garlic, Parmesan cheese, and lemon juice (if using) and continue pulsing to combine.

   Slowly pour in the olive oil, pulsing to incorporate.  Start with 1/4 to start and add to 1/2 cup for more creamy consistency.  
Transfer the pesto to a bowl. 

 Yield: 1 cup pesto.  If serving over pasta, use approximately 1/2 cup for 1 pound pasta.
Toast walnuts for a variation on flavor or substitute Power Blend Mushroom Powder.
